If you've been following along, you've probably noticed that most of my recipes are healthier versions of treats that most of us love.. and usually only require a handful of ingredients. I'm not a mom yet, but I'm glad to be adding these into my routine before I get even busier with more mouths to feed and bodies to nourish.
What I love most about these cookies is that I don't feel guilty eating a few at a time. They're healthy enough to eat for breakfast, yet sweet enough for dessert. Win-win-win.
Ingredients:
1c Rolled Oats*
1c Nut Butter (Almond butter is my go-to)
1/2 tsp Baking Soda
2 Eggs
1/2 c Sugar (optional. I used Coconut Sugar)
1 tsp Vanilla
Chopped Pecans (Optional)
Chocolate Chips (Optional)
*Oats are naturally gluten free. However, due to the way most are manufactured, they are contaminated by wheat, barley, and rye. Be sure you're looking for oats that are labeled "Gluten Free".
Instructions:
Preheat oven to 350*
Blend all ingredients together
Stir in pecan and chocolate chips
Scoop 1tbsp of batter onto cookie sheet
Bake 9 minutes
