Granola Protein Bites

This week I'm traveling to one of my favorite places, Colorado! When I'm packing for a trip, I always take 3 things: snacks, book, hand sanitizer.


Snack: Protein Granola Bites. These are protein packed and so addicting! They only require 3 ingredients, 5 minutes, and 1 bowl. See the recipe below.


Book: I'm finishing up one of the best books I've ever read. I'm not sure why this one resignated with me so much but Emily P. Freeman was speaking right to me in her book, Simply Tuesday. She talks about the power and importance of smallness and bench dwellers versus stages and big cities. Especially in today's society, it's a refreshing and encouraging read. I highly recommend.


Ingredients:

1.5 c Oats (be sure they're labeled "naturally Gluten Free")

1/2 c Nut Butter (my go-to is almond butter)

1/2 c Honey

*1 scoop Collagen or Protein Powder (I used Vital Proteins Collagen)

*Sunflower seeds, chopped pecans

*Chocolate chips, dried fruit


Instructions:

Melt nut butter and honey in a bowl

Stir in remaining ingredients (chocolate chips will melt if not cooled)

Roll into 1 inch balls (I usually get around 30) and store in an air tight container

Enjoy!


Note: when I make these using almond butter and Vital Proteins collagen powder, it equals about 60 grams of protein (not including additional nuts I stir in) + 12 grams of fiber for the whole batch. That's pretty good for a 5 minute snack you can take on the go!
